Mama V’s Meatloaf

Frank Vascellaro and his mother Rosalie head to the kitchen to make some delicious meatloaf. Check out the recipe below.

2 pounds of hamburger
1 teaspoon salt
2 teaspoons pepper
1 teaspoon garlic powder
1 package Lipton Onion soup
3 stalks of celery, chopped
2 carrots, chopped
1/2 onion, chopped
1 cup breadcrumbs
1/2 cup Parmesan cheese
2 eggs
1/2 cup ketchup

Combine all of the ingredients above in the order listed into a large mixing bowl. Blend all of the ingredients thoroughly together.

You may need to add about a half cup of water if it appears the mixture is too dry.

Mold the blended meat into two equal loafs. Spray a 9×12 Pyrex backing dish with Pam and bake loafs in the oven for one hour at 350 degrees.

My father was watching this segment and said with excitement “this looks just like how my mother used to make it”, “look it up on the computer”. I guess we’ll be having this for dinner soon.

    Thanks! Rebecca.
