Here’s this week’s Mama V’s recipe: Pasta & Lentils!


1 package Angel Hair pasta
1 bag brown Lentils
1-Carrot, chopped
½ White Onion, chopped
½ teaspoon Garlic powder
1-tablespoon salt
1-teaspoon pepper
3-tablespoons tomato sauce
Olive oil


Either soak the lentils overnight covered in cold water and rinse them the next day.
OR boil them for 15 minutes covered in water and rinse them.
Place rinsed lentils in pot covered with water and add salt, pepper, garlic powder, carrot and onion and tomato sauce and return to stove. Cook on medium heat (do not bring to a boil) for about hour or until lentils are soft.
Meantime, with your hands, break your angel hair pasta into pieces about one inch long. Boil water and cook as you would any pasta but do not strain the water when it’s done.
Ladle the pasta into a bowl. If the lentils appear real dry add some water from the pasta. Ladle lentils on top of the pasta. Add about one teaspoon of olive oil per bowl. Enjoy.
