Frank Vascellaro and his mother Rosalie head to the kitchen to bake some pumpkin bread. Check out the recipe below.
(Makes about 4-5 loafs)
3 ½ cups-flour
3 teaspoons-pumpkin spice
1 can pumpkin (2 cups)
1 cup vegetable oil
2/3 cup water
2 teaspoons baking soda
1 teaspoon salt
1 cup-walnuts or pecans (optional)
Mix and beat 4 eggs in large bowl. Add 3 cups sugar and pumpkin and mix well.
Add pumpkin spice, salt and backing soda and mix.
Add about one third of the flour, mix well then keep adding flour and water together until all of both are well blended together. Add the optional nuts if you like.
Grease about 4 bread loaf pans with Pam or oil. Fill bread pans about half way because the bread needs room to rise.
Bake at 350 for one hour.
