Ingredients:
1 16-ounce chub pork sausage, thawed
2 cups shredded cheddar cheese, divided
1¾ cups milk
¾ cup all-purpose biscuit & baking mix
5 large eggs, beaten
Directions:
In large skillet over medium-high heat, cook and crumble sausage until no longer pink; drain. Stir in 1 cup cheese. Divide among 1 (12 count) greased muffin pan.
In medium bowl, combine milk, baking mix and eggs; salt and pepper to taste. Whisk until well combined. Divide among muffin pan.
Top with remaining cheese. Bake in a preheated 350°F oven 20-25 minutes or until eggs are set.
Tip: Cool completely and freeze. Microwave (HIGH) 2 minutes or until hot for a quick breakfast.
