Bite Of Minnesota: 2 New Food Trucks

Recently, a group of food bloggers, photographers and general food lovers got together in downtown Minneapolis to tour the food trucks. It is amazing to see how many new trucks keep popping up and we were eager to try a few of the new offerings.

After passing by long lines at Smack Shack and World Street Kitchen (way to go guys!), our first stop was Starlight Diner where the menu took advantage of asparagus season offering an asparagus soup (topped with bacon and edible flowers) along with tender asparagus spears lightly battered and fried served with Bearnaise and rhubarb dipping sauces. Yum!

Next stop was The Moral Omnivore, new on the scene with an irresistible array of sliders, sides and Minnesota made sodas. Since we had a large group, we tried all of the slider options: wild rice sliders topped with pickled radishes, beef wellington with buffalo caramelized onions and a smear of pate. And the crowd favorite: fried tomato BLT topped with a cabbage slaw. We also grabbed an order of the mushroom fries, which were coated in a crispy batter and served with curry aioli dipping sauce. Everything was quite good and worth returning in the near future.

The food truck options continue to expand with new ones showing up throughout the summer in Minneapolis and St. Paul's downtowns, breweries, events and workplaces. It is becoming harder to keep up with each new one and I barely scratched the surface during my quick lunch visit. What new trucks have you tried lately?
