Bite Of Minnesota: Roasted Salmon With Lemon Sage Mustard

Last year I talked about the new salmon share offering from Sitka Salmon Shares and we loved it so much that we renewed again this year and have been enjoying our monthly salmon deliveries throughout the summer. Since I tend to make more complicated meals, it's refreshing to have simple, uncomplicated dishes from time to time. I rarely do much with the salmon, opting to simply rub the filet with olive oil and season with salt and pepper before baking.

With my recent canning obsession, I have an abundance of lemon sage wine mustard and dark beer mustard in the pantry and thought it might pair well with salmon, not realizing how much of a simple yet flavorful addition it would be. Before leaving for a workout, I gave my husband simple instructions to smother the salmon with mustard, bake it for 15 or so minutes in a 400 degree oven, and add a side of steamed rice and vegetables. When I arrived home, this was waiting for me:

What a delicious pairing! The lemon sage wine mustard turned out to be a perfect coating for the salmon and also served a supporting role in seasoning the rice and vegetables without being too overpowering. Even if you don't have time to make and can your own mustard, I encourage you to slather a piece of protein with store-bought flavored mustard and let it shine in your next dinner. Yum!
