HACKENSACK, Minn. (WCCO) — Frank Vascellaro and Chris Shaffer are braving the frigid weather and getting out to Minnesota’s lovely, ice-covered lakes every Thursday and Friday until the middle of February.

The second stop on this year’s winter lake trip brought the fellas to Hackensack, Minn., a town in Cass County with a population of just over 300.

Hackensack is a town with lots to do, and like many of the small towns the guys have been to, you can also find plenty of great places to eat. One of them is Lucette’s Pizza.

Owner Cindy Paulsen opened the place on Valentine’s Day 11 years ago, and she tells Frank and Chris they once served 223 pizzas in one day – which is pretty impressive in town that only has about 300 residents!

Deep Portage Learning Center in Hackensack turns 40 this year. It’s is a non-profit environmental education center that’s open to schools, families and anyone.

In fact, Deep Portage has 10,000 students come through the place every year, where they learn about the environment and how to have some fun outdoors.

The fellas did just that Friday when they took on one of their snowshoe trails.

Jim and Jane Garard know what they’re doing at the Hackensack Bakery, and the price is certainly right.

Their delicious burgers, from a 100-year-old recipe that Jim got from his grandfather, are sandwiched between home-made buns.

It’s a family business that Jim took over from his father in 1976. In fact, the bakery used to be a church, and you can still see remnants like a stained-glass windows in the back storage area.

Deep Portage Learning Center is set on a 10-square-mile reserve which surrounds six lakes. It has 11 miles of ski trails and housing for students.

But they’ve also got some fun things to do inside as well, including an indoor rock-climbing wall!
