Recipe: Chocolate Chip Cookies With Sea Salt

Makes about 2 dozen, maybe.

Ingredients

3 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
28 tablespoons unsalted butter
1 cup sugar
1 1/2 cup brown sugar
2 eggs
2 egg yolks
4 teaspoons vanilla extract
2 teaspoons sea salt
2 1/4 cups chocolate chips

Instructions

Preheat oven to 375 degrees. Line baking sheets with parchment paper.

Get one medium bowl and one large bowl.

Mix flour and baking soda in the medium bowl.

Add 8 tablespoons butter to the large bowl. In a saucepan, over medium heat melt 20 tablespoons butter and stir until it starts to brown, about 5 minutes. Pour browned butter into large bowl and mix until all butter is melted.

Add sugar, brown sugar, vanilla and sea salt. Mix until combined.

Add eggs and yolks mix until combined.
Mix for 30 seconds, then wait 3 minutes.
Mix for 30 seconds, then wait 3 minutes.
Mix for 30 seconds, then wait 3 minutes.

Add flour mixture and mix until combined.

Add chocolate chips and combine.

Spoon dough onto baking sheets using about 3 tablespoons for each cookie.

Place baking pan on middle oven rack and bake for 10-15 minutes, rotating pan halfway through. Cookies will be done when edges are browned slightly and the top of the cookie is no longer shiny. Remove cookies from baking sheet and let cool on a wire rack.
