MNfusion: New Brisket, New BBQ At Famous Dave's

One of the biggest reasons, if not the only reason, that people flock to the Minnesota State Fair is the food.

Each year between 30 and 50 new foods get added to the thousands of options already available. And each year avid fair goers add another favorite to their list.

It's what keeps people coming back. In part because most of these foods are unavailable any other time of the year, even if it is from an established restaurant in the area. Like Famous Dave's.

The barbecue restaurant has been a long time staple at the fair, sitting just down the way from one of the Sweet Martha's Cookies stands.

And in recent years, it has also been among the vendors consistently releasing new foods.

Last year, they released Korean barbecue collar with kimchi pickles. This year, Buffalo'd Bones; crispy pork ribs slathered with a buffalo sauce.

And now, for the first time, if you didn't get try it at the fair you won't have to wait until next year.

Buffalo'd Bones are now officially on the menu at Famous Dave's.

And, unlike the State Fair, that's not the only new thing on the menu.

Famous Dave's is rolling out a brand new brisket.

The 120, industry term for a full -sized, cut is smoked for 14 hours with more hickory logs to create a stronger, more tender beef.

It's so new, in fact, that teams across all Famous Dave's locations received hands on training for how to properly cook and slice the beef.

Seasoned with brown sugar, Dave's Blend and black pepper, it's offered on its own, in sandwiches, in beef tips and on top of Frito Pie.

The lean cut is tender, moist and flavorful, while the Buffalo'd Bones offer a crispy, hot alternative.
