Madden's On Gull Lake Recipe: Grilled King Salmon

Summer resort season may be over, but a new fall menu item is still sparking interest at The Classic Grill at Madden's:

Recipe: Grilled King Salmon (Chili maple glaze, sweet potato puree, cilantro lime sour cream)

1. Salmon:
• 4-6oz king salmon fillets
• Kosher salt
• Black pepper

Season with salt & pepper, grill to desired temperature. Make sure grill is hot and brushed before use.

2. Sweet potato puree:
• 2 medium sweet potatoes
• 1 T. Butter
• Vegetable stock

Bake until soft, allow to cool slightly. Remove skins, place in food processor with butter, blend. Add enough vegetable stock to allow mixture to blend thoroughly. You can always add more vegetable stock if needed, start with a few Tablespoons at first. Blending the sweet potatoes will ensure them to be smooth and velvety.

3. Chili maple glaze:
• 1 dried Ancho chili pepper, chopped
• 1 c. Maple syrup
• A few drops liquid smoke

Mix ingredients in small sauce pot, cook on medium heat for 10 minutes. Simmer for additional 10 minutes. Remove from heat, allow to cool. Strain before use. I like to make it a day before to allow the flavors to really infuse.

4. Cilantro lime sour cream:
• 1 bunch cilantro, chopped
• 1 c. Sour cream
• 2 limes zested & juiced
• Kosher salt to season
• Black pepper to season

Mix cilantro, sour cream, and lime zest. Season with lime juice, salt, and pepper for desired flavor.

5. Plating:

Start with sweet potato puree first. Brush salmon with chili maple glaze, place on sweet potato puree. Top with cilantro sour cream. Drizzle with a spoon of maple glaze to finish.
