Cooking With WCCO: Kona Grill's Macadamia Nut Chicken

MINNEAPOLIS (WCCO) – Kona Grill has a new restaurant open in Ridgedale Center.

So, to celebrate the opening  Kona Grill Chef David Woehler offered up the recipe to one of the restaurant's signature dishes – the Macadamia Nut Chicken.

Macadamia Nut Chicken

Ingredients:
4 Boneless skinless chicken breasts
1/2 cup All Purpose flour
2 eggs
1/2 cup milk
2 cups panko or fine unseasoned breadcrumbs
1/2 cup chopped Macadamia Nuts
2 Tbsp. butter
3 Tbsp. olive oil

Directions
Season the clean chicken breasts with salt and pepper and dredge in flour.

Using a bowl, whisk the eggs and add the milk to make an egg wash.
In another bowl, add the panko and chopped macadamia nuts and mix well.

Take the chicken out of the flour and place in the egg wash, then the panko mix and bread the chicken breasts one at a time.

Using a large sauté pan, heat on medium heat the butter and oil.

Brown the chicken on both sides and place in a pre-heated 400 degree oven for 15 minutes or until done.

Serve with your favorite side dishes.
