Chipotle Black Bean Tequila Chili By Manny's Tortas
Serves 6-8
Ingredients:
2 Table Spoons Olive Oil
1 Onion Diced
1 Green Pepper Diced
1 Pound of Skirt Steak
3 (15 oz) cans of black beans un-drained
1 (14.5 oz) can of crushed tomatoes
1 tablespoon of dried oregano
1 tablespoon of dried basil
1 cup of tequila
¼ - ½ cup of chipotle sauce
1 clove of garlic minced
Sour Cream
Cilantro
Directions:
-Cut skirt steak into small pieces
-Heat the oil in a heavy pot over medium heat and cook the onions, garlic, green pepper until the onions are translucent
- Add the steak and cook until golden brown
- Stir in chipotle sauce, beans, tomatoes, oregano, basil and tequila
-Reduce heat to low and simmer for 2.5-3 hours
-Garnish with Sour Cream and Chopped Cilantro and enjoy
