It truly has been the summer of food trucks. And while it’s not a new concept by any means, 2011 certainly marked the beginning of a beautiful friendship between Twin Cities’ ordinances and new, up-and-coming food trucks.
In the new spring season, I’m not only looking forward to the reopening of farmers markets, but I’m also looking forward to the food trucks hitting the streets. It is sure to be an explosion of food options due to loosened regulation and increased interest in starting mobile food carts.
