Redhead Creamery opened in 2013. The dairy company and cheese producer fulfills orders through its online store and sells cheese to shops, food co-ops and food markets. Redhead Creamery manufactures a selective variety of cheese curds and cheddar and brie cheeses. Everything sold comes straight from the vat. The smooth and creamy brie becomes creamier with age. But only the best cheeses on the open market make it to this wine and spirits mart. You never know which selections will be in the cheese case until you step into the cheese section. This full-service cheese shop and deli has a rich history of cheese making since the 1850s. In 1980, the son of a generational cheesemaker brought handmade cheeses to Twin Cities and opened a deli and cheese store in St. Paul. Nelson Cheese & Deli now sells cheeses brought directly from factories in the Upper Midwest. A co-op café and market, The Wedge Table features local and imported gourmet cheeses. All cheeses sold through the co-op market are certified organic. Made with milk from cows, sheep, goats and water buffalo, many varieties of gourmet cheese come directly to the co-op from local farms. Some of the local cheese producers are descendants of Italian and Swiss dairy farmers who resettled in the Midwest. They were master cheesemakers.
