2-cups flour
½ teaspoon salt
1 1/2-2 teaspoons baking powder
½ teaspoon baking soda
1-cup sugar
1 egg, beaten
2 tablespoons oil or melted shortening
2 tablespoons hot water
½ cup chopped walnuts (optional)
1-cup cranberries cut in half
1/2-cup orange juice
Grated rind of one orange

Sift all dry ingredients from above together. Then, add egg, oil, juice, and water. Combine only until all ingredients are moist. Fold in nuts, cranberries, and orange zest. Bake in greased baking pans. Only fill pan to about 1/3 of capacity, as bread will rise. Bake at 325 degrees for one hour. Enjoy
