ST. PAUL (WCCO) — It’s the first week of the new year, and a lot of us are trying to eat healthy food.

That’s one thing to do at home, but it can be a challenge when you’re eating out.

As a result, Jason DeRusha checks out Foxy Falafel, which started as a food truck.

Erica Strait won’t have to educate people for much longer if her goal of Foxy Falafel domination keeps on track.

“This is chickpeas, onions, some special spices and herbs,” she said. “It’s really basic, but it’s actually very tasty. Falafel is healthy. It is fried, but that’s not a big deal because it’s such a small portion that gets fried.”

Strait trained at the Natural Gourmet Institute in New York, and has a background in nutrition.

Her chickpeas are organic and the turkey is too — it’s from a local farm.

“We do everything local, organic, and sustainable here,” Strait said.

But it’s the falafel that made her famous. Erica has found there’s a real appetite for healthy food that tastes good.

Her Greek salad is a surprisingly big seller. Right now, the lightly fried slice of cauliflower is selling like crazy.

“Cauliflower is good for you because it has phytochemicals in it and they can help prevent cancer,” Strait said.
