Glover, a former aircraft mechanic for the military, was raised in the south and has always had a passion for cooking up classic New Orleans dishes. He utilized his mechanic skills to convert a family RV into a complete kitchen on wheels, bringing flavorful Jambalaya, crawfish étouffée and po’boys to hungry lunchgoers across the Twin Cities.
Bistro La Roux will have the same great food, both for dine-in and carry-out, plus local craft beer, wine and jazz music.READ MORE: Hospitality, Travel Industries See ‘Glimmers Of Hope’ For Job Return, Economic Recovery
Having become accustomed to a diner’s full experience with his food truck, the restaurant’s kitchen will have an open concept so customers can enjoy the sights and smells of New Orleans.
