Healthy And Tasty Summer Dip Alternatives

MINNEAPOLIS (WCCO) – Summer is here, which means there will be barbecues and picnics a plenty.

And these parties always come with food.

Fitness expert Ali Holman stopped by WCCO Mid-Morning to offer up some healthier options for chips and dip.

"SUMMUS" Bean Dip
Mix Hummus with Salsa for the best alternative to bean dip

Pineapple Guacamole Dip
2 cups Sabra Guacamole
1 1/2 cups diced fresh pineapple, plus extra for topping
1/2 cup finely chopped red onion
1 Tbsp. fresh lime juice
1/4 cup fresh cilantro leaves, finely chopped
1/2 tsp. coarse sea salt
Dash of cumin

"Skinny" Buffalo Dip
1/2 cup light mayonnaise
7 oz plain greek yogurt
2 TBSP buffalo sauce
1/4 to 1/2 tsp garlic powder

Directions
Mix together the mayo, greek yogurt, and buffalo sauce.  Slowly add the garlic powder, starting with 1/4 tsp and adding a little more at a time until you reach the desired taste.
Serve with cut veggies

Roasted Cauliflower Yogurt Dip
1 head cauliflower (2 pounds), cut into florets
2 tablespoons extra-virgin olive oil
1/4 teaspoon whole cumin seed
Coarse salt
Red-pepper flakes
1 cup low-fat plain yogurt
1 tablespoon lemon juice

Directions
Heat oven to 425 degrees. On a rimmed baking sheet, drizzle cauliflower with oil and sprinkle with cumin. Season with salt and red-pepper flakes. Roast, stirring once, until golden brown and tender, about 25 minutes. Let cool.

In a food processor, puree cauliflower with yogurt and lemon juice.

Greek Yogurt Dip:  Serve with Sugar Snap Peas for additional calorie savings

FOR THE KIDS!
"Cupcake" Yogurt Dip
1 Box Betty Crocker Party Rainbow Chip Cake mix
1 1/2 C. Plain Yogurt
2 C. Cool Whip
Sprinkles

Instructions
Stir first two ingredients together in a large bowl until combined. Fold in Cool Whip. Chill for at least one hour. Cover dip with sprinkles before serving. Stores in the refrigerator for 3 days and can be frozen.  Serve with Animal Crackers
