Cooking With WCCO: DeRusha's Mom's Cheesecake
MINNEAPOLIS (WCCO) – The holidays are a time for traditions. So, for the month of December we're sharing traditions from the kitchens of our WCCO Mid-Morning team's families. This week, it's the DeRusha's cheesecake.
It's a Christmas tradition growing up in the DeRusha household: Maggie DeRusha's cheesecake. It's super easy; just seven ingredients create this super delicious dessert.
Crust Ingredients:
2 1/2 cups Graham Crackers (crushed)
1/2 cup melted butter
4 Tbsp. Sugar
Base Ingredients:
24 oz. cream cheese
1 cup sugar
4 eggs
1 tsp. vanilla
Topping Ingredients:
½ pint sour cream
2 Tbsp. sugar
1 tsp. vanilla
Directions:
Mix ingredients for the crust, and line a 9 x 13 oblong pan.
Cream the cream cheese, then add sugar, then eggs. Use a hand or stand mixer.
Finally, add vanilla.
Pour over unbaked crust and put in a preheated 350 degree oven for 30 minutes.
For topping, follow the same creaming process as for the base.
When the cheesecake is cool, cover with the topping.
