Chocolate Blackberry Buttermilk Layer Cake From Madden's Classic Grill

The Classic Grill at Madden's Resort is re-opening for three days just in time for Valentine's Day. The grill will host a special four-course dinner Friday, Saturday and Sunday.

Cost is $34.95 per person.

One of the desserts will be a Chocolate Blackberry Buttermilk Layer Cake.

The award winning culinary staff visited WCCO Mid-Morning to show how the cake is made.

Chocolate Blackberry Buttermilk Layer Cake

Blackberry Cake Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons butter, softened
2/3 cup plus granulated sugar
1/2 teaspoon pure vanilla extract
1 large egg
1/4 cup buttermilk
1/4 cup sour cream
1 1/2 cup blackberries

Blackberry Cake Directions:

Preheat oven to 350 degrees. Coat one 10-inch round cake pan with butter spray and line with parchment paper.
Mix dry ingredients in one bowl and mix sour cream and buttermilk in another.

Cream butter and sugar until light and fluffy, scraping the bowl a couple of times.  Add egg and vanilla until incorporated.

On a low speed, add the flour mixture in three batches, alternating with buttermilk mixture beginning and ending with flour. Scrape well and mix until batter is smooth.

Fill cake pan with batter and level out as flat as possible. Lay out blackberries evenly over top pushing them lightly into the batter. Sprinkle with granulated sugar.

Bake until cake is golden. Start checking at 18 minutes. Cool in pan until cake is cool to the touch. Flip out and carefully remove paper.

Chocolate Buttermilk Cake Ingredients:

2 cups all-purpose flour
1 3/4 cups sugar
2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup unsweetened cocoa powder
3/4 cup canola oil
1 cup buttermilk
2 large egg
1 cups freshly brewed, strong hot coffee
1/2 teaspoon pure vanilla extract

Chocolate Buttermilk Cake Directions:

Preheat the oven to 350 degrees. Paper one 10-inch cake pan with nonstick spray and line the bottom with parchment paper. Two pans can be used if you don't want to slice the cake before assembling

Mix dry ingredients in mixing bowl.

Keeping the mixer on low speed add oil, buttermilk, and eggs. Add coffee in a thin stream, pouring down the side of the bowl. Scrape well and mix until incorporated.   Stir in vanilla and mix until batter is smooth.

Bake until center is done. Start checking at 25 minutes. Cool in pan until cake is cool to the touch. Flip out and carefully remove paper.

Blackberry Glaze Ingredients:

2 cups blackberries
3/4 cup water
5 Tablespoons corn starch
1/2 cup sugar

Blackberry Glaze Directions:
Crush blackberries and cook with water for five minutes. Strain.
Mix cornstarch and sugar. Sprinkle over blackberry mixture and cook until thick.
