The meat-free hot dog scene is expanding, especially in the Twin Cities. No need to trek to Coney Island or Chicago for savory ways to top your footlong. Since hitting the Minneapolis restaurant scene in May 2015, this diner has made vegetarians happy with four veggie dog options. Try the namesake Nighthawk veggie dog smothered in dill mayo, hot giardiniera and spicy mustard, then topped with shoestring potatoes and a red dragon cheese.
