Okay, I admit it—being at the State Fair so much has addled my brain. Generally, I prefer to do something around a fresh vegetable at the height of summer produce—but all I can think about are crazy over the top silly foods, and ice cream. So I’m going with it! Have you ever thought about all the things you can make using a humble pint of melted ice-cream as an ingredient? Well you don’t have to think about it because lots and lots of other people have—and we can marvel at their ingenuity and take advantage of their smarts.
Ice Cream Bread
Two cups of ice-cream and a cup and a half of self-rising flour are all you need to make a loaf of tea-cake style bread. Try Rum Raisin! Chunky Monkey! That would be such good morning toast. One caveat: If you want to make peppermint chocolate chip bread you’re on your own. I don’t think I can get behind that.
Serious Eats’ Chocolate Ice-Cream French Silk Pie
You can take some chocolate pudding mix, and stir in some melted chocolate ice-cream, then put it in a pie-crust to chill: Voila! Next level chocolate silk cake.
Food & Wine’s Melted Vanilla Ice Cream Bread Pudding
All you need is a loaf of a rich bread like Brioche or Challah, some eggs, and a melted pint of good vanilla ice-cream. I have a friend that makes this for dinner parties all the time. It always comes out great.
Ice Cream Chocolate Cookies
This recipe doesn’t use a ton of ice-cream, but it does make very beautiful chocolate chip cookies with a little extra magic to them. Also, since we’re heading into school bake-sale season, I thought you needed to have them. Nice work Crazy for Crust!
Melted Ice Cream Cake
So easy. Combine: 1 box of any kind of cake mix—any kind! 3 raw eggs and one pint of melted ice-cream. Blend well together. Bake the cake according to the package directions. It’s so easy!!!
