Of course one of my all-time favorite State Fair foods is the roast corn – but what can you do after the State Fair, to get those good roast corn flavors at home? Plenty.

Dominique Ansel’s Grilled Corn Ice-Cream

Okay, I don’t actually have this recipe, but the famed French pastry chef, the legendary Cronut creator, the former Off the Menu guest Dominique Ansel took the food world by storm in July with a caramel ice cream grilled corn taco. I don’t know how he did it. He’s a genius. He does stuff. But! You can do this. Get a pint of caramel ice-cream. Serve it with a sprinkle of your roast corn kernels, and a sprinkle of sea salt, a spoonful of honey drizzled around if you’re being fancy. This is a really good summer sundae!

Bacon-Fat Roasted Corn and Tomato Salad

This is a good technique. You’re browning some bacon, and then using the pan-grease to pan-sear the corn. After you’ve done that, you’re three-quarters of the way to a very nice pan roasted corn and tomato salad.

Roast Corn Quinoa Cheddar Muffins

If you make enough roast corn that you have corn left over, you can make the best corn muffins by dumping some of that roast corn in the batter. These cheddar muffins with quinoa, the high protein grain, are quite spectacular, though if you were going to roast corn from scratch for them that would be an all-day, crazy project—which I would admire.

Grilled Corn and Pulled Chicken Tacos

Throw an extra rotisserie chicken and a jar of green salsa in the cart next time you’re at the grocery store, and you’re well down the road to a grilled-corn-and-pulled-chicken taco. This is a Tuesday night busy dinner of joy.

Most people know how to do this today I think, but if you don’t – just watch a Martha Stewart video. I don’t think you even need to soak the corn, but you can. I think it just makes it take longer.

Rick Bayless’ Mexican version with crema, lime, and chile is a classic, and something I wish I could have all the time—and of course I also wish sweet corn was in season all the time, but it’s not so you have to make the most of it when it is!
