I got a request last week for the best turkey burger recipe—and I thought, let’s do this. Let’s talk about the very best turkey burgers, because too often they’re dry, crumbly, and basically horrible. But not these! These turkey burgers are the good ones. The great ones even. The moist and tasty ones! Here they are, my top five turkey burgers of all time.

One smart way around the inherent dryness of ground turkey: Get some spinach into the meat mix. I know your first reaction might be: Why would that make it tender, it’s not fat? But it just does. So if you want a tender, but low in fat burger, this is your winner. That’s why we’re eating turkey, right?

Greek Turkey Burger with Tzatziki

This is such a good technique. Mix feta cheese and garlic into your turkey patty, and you get something a whole lot like a gyro—pile onions, cucumber slices, tomato, and tzatzki sauce up top and you are living large (but still healthy!)

What can I say? Turkey just goes really beautifully with sage—that’s why we have Thanksgiving, right? And this turkey burger is basically a turkey sausage with sage, then paired with a fried egg. It’s fiendishly good—and a seriously good breakfast for dinner anytime. Who doesn’t love breakfast for dinner?
