Seward Creamery Café's Roasted Vegetable Salad
MINNEAPOLIS (WCCO) – The Seward Community Co-Op recently opened its second location in the Bryant-Central Neighborhood in South Minneapolis.
But near the original store on East Franklin is the Seward Creamery Cafe.
Chef Lucas Almendinger from the café joined WCCO-Mid Morning to demonstrate how to make a roasted autumn vegetable salad.

Ingredients
Beets
Sun Chokes
Celery Root
Parsnip
Instructions
Slice vegetables and coat in olive oil
Place in pan on a bed of salt, giving vegetables space
Roast until caramelized
Plate with burrata and citrus
