The food trucks are back on the streets of Minneapolis and St. Paul. Even though they usually open their windows at 11 a.m., the work starts early in the morning. You have to get up early to begin the day with with Christina Nguyen and Birk Grudem from Hola Arepa, and Natalie Coleman and her team from Dandelion Kitchen.
It’s tough to miss this week’s feature — with a sunny yellow truck and flavors just as bright, Dandelion Kitchen is certainly a fan favorite among food-truck goers.
When it comes to good eats on the streets, Minneapolis and St. Paul are really making quite a name for themselves.
In the new spring season, I’m not only looking forward to the reopening of farmers markets, but I’m also looking forward to the food trucks hitting the streets. It is sure to be an explosion of food options due to loosened regulation and increased interest in starting mobile food carts.
