Wintry Weather Good News For Maple Syrup Lovers

MINNEAPOLIS (WCCO) – For those who love Minnesota-made maple syrup, enduring this week's wintry weather isn't so tough.

Because of the recent cold spell, the state's maple syrup season has been prolonged.

On Wednesday, workers at the Lowry Nature Center in Victoria pulled more than 77 gallons of maple sap.

Earlier this month, when temperatures rose to a balmy 70 degrees, the trees were holding onto their sap and workers at the nature center could barely get one gallon of it from the trees.

One gallon of maple sap cooks down to about three ounces of syrup, just enough for a stack of pancakes.

But since the mercury has dropped and snow has fallen, the sap bags have been filling up.

Maple sap can be collected until the trees start to bud. After that, the syrup's taste changes for the worse.
