The bees are quiet now, but earlier this year – they were busy making honey for the chefs at Marquette Hotel in downtown Minneapolis.

They started keeping bees on the roof of the hotel about 3 years ago. And, they use the fresh honey in some of their recipes and cocktails.

Here are two cocktail ideas:

Honey Bubbles
1 ½ oz. Mount Gay Rum
¾ oz. Marquette Rooftop Honey simple syrup*
¼ Fresh Lime
Top with Champagne

The Bee’s Knees
1 oz. Gin
1 oz. St Germain
¾ oz. Marquette Rooftop Honey simple syrup*
Top with½ oz of fresh squeezed grapefruit juice

*Made with equal parts honey, sugar and water
