Bite Of Minnesota: Food Trucks Returning
In the new spring season, I'm not only looking forward to the reopening of farmers markets, but I'm also looking forward to the food trucks hitting the streets. It is sure to be an explosion of food options due to loosened regulation and increased interest in starting mobile food carts.
I can't wait to get some old favorites, like the lobster roll from Smack Shack (downtown Minneapolis):
And the Salted Caramel Ice Cream Sandwich from World Street Kitchen (downtown Minneapolis):
And of course, my favorite weekend breakfast: the Sabich Sandwich from Foxy Falafel at the Kingfield Farmers Market.
Look for the food trucks and carts to be rolling in next week and really heating up as the weather gets warmer. If you can't make it downtown, be sure to check out some new offerings at farmers markets this season. I'm especially excited to try the fresh flavors from Gai Gai Thai at the Fulton and Kingfield markets along and try one I missed last year, Dandelion Kitchen at the Midtown market.
